Cheesecake Bars

These yummy cheesecake bars are a delicious treat with a buttery biscuit base, a creamy cheesecake filling, and a delicious flavoured soft set chocolate topping.

The flavours I have chosen are caramel, banana, and milk chocolate, but other great combinations could be Raspberry and dark chocolate, lemon and white chocolate, or even honeycomb and milk chocolate!

You can use any type of biscuit for the base, but some may need more or less butter, so don’t add it all at once!

Ingredients

• 100g Natural Flavoured Icing Sugar
• 300g cream cheese
• 200ml double cream
• 20 lotus biscuits
• 90ml melted butter
• 200g milk chocolate
• 90g butter
• 1/2tbsp Flavour Shot
• Any toppings you might like eg. fresh or dried fruit.

Method

1. Place the biscuits in a bag and smash into a fine crumb with a rolling pin.
2. Add the melted butter a little at a time until the consistency is crumbly but well coated.
3. Tip the biscuit mixture into a lined brownie tin and press down well to make an even base.
4. Pop the base into the fridge while you make your filling.
5. In the bowl of a stand mixer add the cream cheese, double cream and Natural flavoured Icing Sugar and whisk until thick.
6. Spread this mixture evenly onto the biscuit base, then return to the fridge.
7. Melt the chocolate and 90g butter together in short bursts in the microwave. Once melted you can stir in the Flavour Shot.
8. Pour over the cheesecake filling, then add any toppings you would like at this stage before returning to the fridge.
9. Leave to set for a minimum of 4 hrs before slicing.
