Made from real sugar in beets, Isomalt is a sugar substitute that is much loved by regular bakers. Used for healthier, sugar-free creations, Isomalt isn’t as sweet as your standard sugar, but can be blended with sweeteners for that desired sweet treat taste.
Isomalt can also be for decorating cakes; it just simply needs to be heated in order to be moulded or shaped. The reason Isomalt is a popular choice because it does not caramelize when it is heated in the way that sugar does meaning it also doesn’t have a yellow-caramel tone to it either making it a great choice for decorating when clear colour is desired.
