What is Coconut Ice?

Coconut Ice is a British confectionary, it’s made using grated desiccated Coconut.  Made using only 3 ingredients to create a delicious flavoured sweet treat. We have naturally flavoured it by using our Sugar and Crumbs Natural Flavoured Icing Sugar.

Equipment List

• Loaf tin or small deep square tin
• Baking Paper
• A couple of bowls 
• Scales
• Tablespoon and a Spatula

Ingredients 

• 250g Sugar and Crumbs Natural Flavoured Icing Sugar (flavour of your choice)
• 200g Condensed Milk
• 200g Desiccated Coconut

Instructions

• Mix the icing sugar and condensed milk until combined fully with a spatula.
  
• Next add in the coconut and fold in until fully combined together.
  
• Split the mix into two bowls, (it’s easier to weigh it out so they are the same) add food colouring in one and mix it in well.
  
• Now line your tin with baking paper and place one colour in and flatten it out evenly
  
• Spread the next colour out on top and again spread evenly and flatten again
  
• Leave to set for 1 hour before slicing.

The Coconut Ice is best eaten within 1 week, store in an airtight container
