Square Jaffa Cakes

Who says Jaffa cakes have to be round? Enjoy making these unique square  Jaffa cakes to have as a treat with your family and friends.

What are Jaffa Cakes?

The Jaffa Cakes are quick and easy to make and are a light delicious sponge flavoured with our Orange Zest Natural Flavoured Icing Sugar with a spoonful of orange marmalade on the top and covered in melted mixed Callebaut milk and dark chocolate.

Ingredients 

• 150g Self Raising Flour
• 150g Sugar and Crumbs Natural Flavoured Icing Sugar of your choice /on this occasion we have used Orange Zest Flavour
• 150g Margarine
• 3 Eggs

Filling

• Marmalade, any flavour you desire

For the topping

• 150g Callebaut Milk Chocolate
• 150g Callebaut Dark Chocolate

Instructions

1. Preheat the oven to 140c Gas mark 1, 275F, and lightly grease a 12-hole square bun tray.
   
2. Cream the Natural Flavoured Icing Sugar and the Margarine together until light and fluffy.
   
3. Add the eggs one at a time, you can also add a spoonful of flour to avoid the mix looking curdled.
   
4. Divide the mixture equally between the square bun tin and bake in the oven for 25 minutes or until the sponges are golden brown and firm to the touch.
   
5. Remove from the oven and allow to cool for 15 minutes in the tin before transferring them to a wire cooling rack to cool completely.
   
6. Using a small mini pallet knife cut a medium size square layer not too deep out of the top of the cakes and spoon the marmalade into it. 
   
7. Melt the Callebaut Chocolate in a microwavable bowl in the microwave on 30 seconds bursts until smooth and runny.
   
8. Cool the melted chocolate down by adding a few chocolate chips at a time until the chocolate is cool on your lip.
   
9. Using a dessert spoon carefully spoon the chocolate over the marmalade and smooth it to the edge of the cakes. Try not to let the chocolate drip down the sides but if oil does do not worry it’s more chocolate for you.
   
10. Put the Jaffa Cakes in the fridge for 15 minutes to allow the chocolate to set.
    
    The Jaffa Cakes will keep for up to a week if stored in an airtight container.
