Sugar Cookie Bars

These Sugar Cookie bars are so soft and delicious with a buttercream frosting! Make them in any flavour using our delicious Natural Flavoured Icing Sugars!

I have made Salted Caramel flavoured Cookies with Banana split Flavour buttercream topping, but these would be delicious in strawberry and vanilla flavours or anything you fancy!

Ingredients

• 200g Natural Flavoured Icing Sugar
• 200g room temp butter
• 1 lg egg
• 1 1/2 tsp baking powder
• 1/4tsp salt
• 270g plain flour

• 250g Natural Flavoured Icing Sugar
• 125g room temp butter

Method

1. Preheat your oven to 170c and line a 9″/11″ brownie tin with greaseproof paper.
2. Cream together the 200g butter and natural flavoured icing sugar using the beater attachment of your stand mixer.
3. Add the egg and mix again until well combined.
4. Now add the Flour, salt and baking powder and mix on low until just combined.
5. Scrape the dough out of the bowl into the lined tin and spread evenly.
6. Bake for roughly 15-18 mins, until the edges are golden and the middle is still soft.
7. Allow to cool completely in the tin.
8. Make the buttercream topping by beating together the 125g of butter and 250g Natural Flavoured Icing Sugar.
9. Once the cookie has cooled completely, spread the buttercream on top, then chill for at least 30mins.
10. Slice into squares making sure to wipe your knife between cuts for a neater finish.
