Enjoy making these indulgent Vegan Chocolate Chunk Cookies as a delicious treat to enjoy with your family and friends.
These Vegan Chocolate Chunk Cookies are made using non-animal products. They have a crunchy outside and a deliciously gooey inside with melted chocolate chunks in every mouthful.

Method
1. Add the Non-Dairy Margarine, Natural Flavoured Icing Sugar, and brown sugar into a mixing bowl and beat until light and fluffy.
2. Add the flour, cocoa powder along with the salt and bicarbonate of soda, and with a spatula or wooden spoon mix until fully combined.
3. Add the 1 Tbsp Soya Milk to the mix and combine fully.
4. Next, add the chocolate chunks and mix in. Your cookie dough is going to be very thick but sticky enough to roll into a ball.
6. Roll the dough into balls,( if the cookie dough is very sticky you can dip your fingers in cocoa powder to help the dough not stick to your fingers.) and place onto the baking tray. Leave a good space to allow the cookies to spread.
7. Bake in the oven for 10-15 minutes until the outside of the cookie has a crust. Remove from the oven and tap the baking tray on your work surface and the cookies will flatten, they do have a cracked appearance.
8. Allow to cool completely on a wire tray then they are ready to enjoy. 🙂
