There’s nothing quite like a home made Apple Pie to warm you up from the inside on those cold autumn evenings. It’s the ultimate in comfort food!

This Apple Pie recipe uses Pink Lady Apples. These are the perfect apples for the job as they’re both sweet and tart, plus they hold their shape when cooked.

Ingredients

For the pastry:

  • 225g plain flour
  • 140g unsalted butter
  • 55g caster sugar
  • 3tbsp milk
  • 2tbsp Flavour Shot

For the Filling:

  • 6 Pink Lady apples
  • 120g unsalted butter
  • 18g plain flour
  • 150g caster sugar
  • 50g Sugar and Spice Natural Flavoured Icing Sugar
  • 60ml water
  • Milk or egg for brushing over the pastry

Method

For the Pastry:

  1. Add all of the ingredients to the bowl of a food processor and pulse until a dough is formed.
  2. Divide the pastry into 1/3 and 2/3 and wrap with clingfilm.
  3. Chill for around half an hour.

For the Filling:

  1. In a heavy based pan over a medium heat, melt the butter completely.
  2. Add in the flour and whisk together to form a paste.
  3. Allow the butter/flour paste to cook out for roughly one minute, whisking continuously.
  4. Whisk in the water and sugar and bring to the boil.
  5. Reduce the heat to simmer for 3-4 minutes, then remove from the heat.
  6. Peel and core the apples, then slice thinly.
  7. In a bowl combine the sliced apples with the natural flavoured icing sugar and toss to coat the apples.
  8. Pour over the warm sauce and stir to combine.

To assemble the Apple Pie:

Preheat your oven to 220c fan.

  1. On a floured worktop, roll out the 2/3 ball of pastry and line to bottom and sides of the pie dish.
  2. Pour in the apple filling being careful not to get any filling on the edges or the crust, making it difficult to seal the top pastry.
  3. Roll out the 1/3 ball of pastry and cut into 2cm strips.
  4. Lay several strips of pastry over the top of the filling in one direction.
  5. Turn the pie 1/4 and lay down one strip of pastry at a time weaving between the first layer of pastry strips to create a lattice type effect.
  6. Brush over the pastry with milk or beaten egg.
  7. Bake at 220c fan for 15mins, then reduce the oven temperature to 170 and continue to bake for another 45 mins.
  8. Serve warm or cold with fresh cream, custard, or vanilla ice cream!
  9. Enjoy your home made apple pie!
