Basque Cheesecake is a decadent treat, differing from the baked cheesecakes in that it has no crust and has a beautiful golden caramelised top and edges.

Ingredients

Cheesecake:

  • 800g cream cheese
  • 225g caster sugar
  • 3tbsp plain flour
  • 200g sour cream
  • 4 large eggs
  • 2tsp Just Flavour

Topping:

  • 300g cherries (stoned)
  • 50ml water
  • 50ml caster sugar
  • 1tsp Just Flavour

Method

Preheat oven to 240c Fan

  1. In the bowl of a stand mixer with the whisk attachment fitted, whisk the cream cheese and sugar together for 2 minutes until well combined.
  2. Add the eggs while continuing to whisk, and then the Sour cream.
  3. Next Sieve in the flour and Just Flavour and thick again until smooth.
  4. Pour the mixture into a lined 8″ cake tin.
  5. Bake for 20 minutes, then reduce the oven temperature to 180c fan and bake for another 20 minutes.
  6. Allow to cool completely inside the tin.
  7. Into a heavy based pan, add the sugar and water. Dissolve the sugar at a medium temperature, then turn up the heat and bring to the boil.
  8. Add the cherries and Just Flavour, then simmer for 5 minutes.
  9. Once the cheesecake is completely cooled, slice and serve at room temperature with a spoon full of the cherries.
