This brown butter Cookies recipe makes beautifully chewy, rich flavoured, crisp edged treats! Easy to make and oh so moreish!

Ingredients:
- 140g lightly salted butter
- 145g Soft brown sugar
- 65g caster sugar
- 1 large egg (room temperature)
- 215g plain flour
- 1 heaped tsp Just Flavour
- 3/4tsp Bicarbonate of soda
- Any inclusions you would like to add
Method:
To brown the butter:
- Pop the butter into a heavy based saucepan.
- Tun the hob onto a medium heat and stir the butter continuously.
- Bring the butter to a gentle boil. As the water evaporates from it a foamy substance should appear on the surface.
- Continue to heat while continuously stirring. You should see little brown specks forming.
- As soon as you smell a nutty aroma (before the brown specks turn black and the butter is burnt) remove from the heat and transfer into a heatproof dish to prevent further browning.
For the cookies:
- Combine Both types of sugar with the browned butter, mixing to form a loose paste.
- Add the egg and mix until combined making sure not to mix too vigorously and solidify the butter.
- Sieve in the flour, Just Flavour, and baking powder and mix until combined.
- Now you can fold in any inclusions you might want to add.
- Cover the bowl with clingfilm and allow to chill in the fridge for a minimum of an hour and a half.
- Preheat the oven to 170c fan.
- After chilling, use a cookie scoop to portion the cookie dough. roll into balls and place onto a lined cookie sheet leaving plenty of room for the cookies to spread.
- Bake for 8-10 minutes. The cookies should be soft in the centre but browning at the edges.
- Allow to cool for 10minutes on the baking tray before transferring to a cooling rack.
