Cake mix cookies are a quick and easy treat you can make in a pinch! You can use any flavour of cake mix, or even add a Flavour Shot to jazz up a vanilla cake mix too!

Ingredients
- 500g Easy Bake cake mix
- 2 eggs
- 75g vegetable oil
- Flavour Shot (optional)
- Chocolate chips/fruit pieces/sprinkles (optional)
Method
- Add the cake mix, oil, and eggs (plus optional flavour shot) to the bowl of a stand mixer and beat on a medium speed until well combined.
- If you are adding in any choc chips or fruit etc, fold these into the dough by hand.
- Prepare two baking sheets with greaseproof paper, then use an ice cream scoop to portion the cookies.
- Leave plenty of room between the scoops of cookie dough as they will spread during baking.
- Turn your oven on to 170c fan (gas mark 3) and pop the cookies into the fridge while the oven gets to temperature.
- Bake for around 15 mins until the edges of the cookies are golden. If the middle of the cookies still seems soft, don’t worry, they will firm up once cooled.
- Transfer to a cooling rack and allow to cool a little before enjoying!
