Chocolate Pine Cones are a cake pop filling made with sponge and buttercream, then covered with cornflakes and dipped in melted chocolate. Very easy to make and great to make with children so they can get involved in some baking with you.

Ingredients

  • 250g Sponge (made from cake mix, recipes here)
  • 75g Unsalted Butter
  • 150g Sugar and Crumbs Natural Flavoured Icing Sugar (Your Flavour Choice)
  • 30g Cornflakes
  • 200g Milk Chocolate
  • 1/2 Tsp Flavour Shot (You Flavour Choice)

Method:

  • Start with making the sponge to the recipe you are using, once baked and cooled make the buttercream by adding the butter to a mixing bowl and beating until creamy, add the icing sugar and beat in until combined.
  • Break up the sponge and add to the mixing bowl, beat in until combined. It should look like wet dough.
  • Next weigh out the dough into 50g balls and shape into cone shapes.
  • Using the cornflakes start to push them in the cone shapes starting at the bottom and layer around, then layer up and around all the way to the top.
  • Now place in the freezer for 30 minutes.
  • Melt the chocolate in short 30 second bursts in the microwave and add the flavour shot, stir together.
  • Use a fork and place in in the underside of the pine cones and dip it into the chocolate. Shake off any excess and place on a cooling rack to dry.

Keep in the fridge for freshness and eat within a week.
