Crumble Apple Bars are a easy bake recipe that consists of a shortbread base with a apple filling and a crumble top. Once cooled they are easier to cut into perfect bars for eating on the go or at home. I’ve flavoured these with Salted Caramel but other flavours work well too.

Ingredients

Shortbread Base

  • 2 Tbsp Sugar and Crumbs Icing Sugar ( Flavour of your choice – Salted caramel, Velvet Vanilla and Cinnamon Swirl work well )
  • 120g Unsalted Softened Butter
  • 1/4 Tsp Salt
  • 160g Plain Flour

Apple Filling

  • 225g Cooking Apples (thinly sliced)
  • 40g Plain Flour
  • 6 Tbsp Sugar and Crumbs Icing Sugar ( flavour to match above )
  • 1 Tbsp Dark Brown Sugar

Crumble Top

  • 50g Unsalted Softened Butter
  • 55g Oats
  • 50g Plain Flour
  • 95g Dark Brown Sugar
  • 1/2 Tsp Cinnamon (optional)

Method:

  • Preheat the oven to 160c. Line a brownie tin approx 8×8 works well.
  • To start the Crumble Apple Bars prepare the base, mix all the ingredients together in a mixing bowl and combine with your hands. Once its come together press into the tin and spread evenly. Bake for 10mins.
  • Now place the thinly sliced apple slices in a bowl, mix the icing sugar, brown sugar and plain flour together before adding to the apples. Stir the apples and then add on 2 tbsps of water and fold over the apples.
  • Place the apples over the base reserving the juice.
  • Next make the crumble topping by mixing all the ingredients together in a bowl, use a spoon or your fingers to do this before pressing over the apples filling all the gaps. Drizzle the juice from the apples over the top.
  • Bake in the oven for 30-35 mins until golden.

Leave to cool before slicing for the perfect bar.

Serve warm with ice cream or custard alternatively eat cold. Eat within in a few days for freshness.
