This Festive Cranberry Pound Cake is a simple baked loaf cake that is perfect for a treat with a hot drink during these colder months!

Ingredients
- 175g butter
- 390g caster sugar
- 4lg eggs
- 1tsp Just Flavour
- 390g self raising flour
- 230g Sour cream or creme fresh
- 180g dried cranberries
- 1/2 tsp baking powder
- 200g Natural Flavours Icing Sugar
- Boiled water
- Extra cranberries for decoration
Method
Preheat oven to 180c fan
- In the bowl of a stand mixer, with the beater attachment fitted, cream together the butter and sugar for 2 minutes until pale and fluffy.
- While continuing to mix on a medium to low speed, add the eggs one at a time letting each egg fully incorporate into the mixture before adding the next.
- Sieve in the flour, just Flavour and baking powder, then mix on low until just combined.
- Add the Sour Cream/Creme Fresh and mix again until combined.
- Fold in the cranberries by hand, then pour into 2x 2lb lined loaf tins.
- Bake for 60-70 minuted until baked through.
- Allow to cool completely.
- Once cooled, combine the icing sugar with a little water to make a drizzle.
- Pour the drizzle over the loaves and sprinkle on a few dried cranberries.
