What are Fresh Cream Meringues?
These Fresh Cream Meringues are a great treat to have with a cup of your favourite beverage with your family and friends over a chat.
You can also try making these meringues with any of our amazing Natural Flavoured Icing Sugars!
Ingredients
- 250g Flavoured Whipping it Up Mixture flavour of your choice
- 70ml Warm (Room Temperature) Water
Instructions
Preheat oven to 275°f, 100°c Fan, 1/2 Gas
- Place 250g mixture and 70ml water into a Grease-free clean mixing bowl with a whisk attachment, and blend until light and fluffy, forming stiff peaks, like meringue.
- Fill a large piping bag, using various nozzles a 1M Star tip or large round tip is great.
- Pipe on to greaseproof paper on a baking tray into long fingers or rounds depending on what shape you want your meringues to be.
- Bake for 50- 55 minutes, you should be able to tap the base and they will come gently off the greaseproof paper.
- Place on to a cooling rack to cool completely before gently peeling off your greaseproof paper.
- Once the meringues have cooled, melt some Callebaut Chocolate and dip the bottom of the meringue shells in the chocolate and leave to dry completely.
- Whip the double cream with the whisk attachment and add 2 tbsp of Sugar and Crumbs Natural flavoured Icing Sugar of your choice.
- Using a 1M Star Tip nozzle pipe cream onto 1 half of the meringue shell and top with another meringue shell.
- This is optional but you can melt some White Callebaut Chocolate and drizzle across the top of the filled meringues.
Top Tips
- The larger they are the longer you will need to bake for (eg approximately up to an hour).
- When they lift off the greaseproof paper they are cooked, you can now remove from the oven.
