Sweet, creamy, and beautifully nostalgic — Gypsy Tart is one of those old-school British desserts that instantly takes you back. Made with a light shortcrust pastry and a silky filling of whipped evaporated milk and muscovado sugar, it’s simple, sweet, and utterly moreish. Whether you grew up with it on the school dinner menu or you’re discovering it for the first time, this Gypsy Tart is a true taste of comfort.

Ingredients

  • 1 egg yolk
  • 125g butter chilled
  • 250g plain flour
  • 2 TBSP cold water
  • 400g evaporated milk
  • 250g dark muscovado sugar
  • 2 tsp of vanilla Just Flavour

Method

Pastry:

  1. In a large bowl, rub butter into the flour.
  2. Add the egg yoke and cold water.
  3. Chill 30 minutes.
  4. Roll out fit in your tin, then blind bake on 180c for 15 minutes.
  5. Let it cool.

Filling:

  1. Wisk in a bowl evaporated milk and sugar plus flavour for10 to 15 minutes.
  2. Pour into cooled Pastry, then bake for 10 minutes.
  3. Store in fridge.
