Homemade Mars bars are a chocolate bar with a nougat base with a caramel topping and then coated in chocolate to finish. Easier to make than you think. The nougat and caramel have both been flavoured with Sugar and Crumbs Icing Sugar.

Ingredients

Nougat

  • 200g Sugar and Crumbs Natural Flavoured Icing Sugar (Flavour of your Choice)
  • 200g Caster Sugar
  • 1 x 140g Liquid Glucose
  • 2 x Egg Whites Large
  • 125ml Water
  • 15g Cocoa Powder

Caramel

  • 75g Unsalted Butter
  • 35g Light brown Sugar
  • 35g Sugar and Crumbs Natural Flavoured Icing Sugar
  • 1/2 Tin of Condensed Milk Unsweetened
  • 1 Tbsp Golden Syrup

Chocolate Covering

  • 250 Melt and Pour Milk Chocolate
  • 1/2 Tsp Just Flavour

Method:

  • Homemade bars need making in 3 steps, firstly we are going to make the nougat. To start this you need to add both the sugars, liquid glucose and water to a heavy based pan.
  • Set over a low heat and stir continuously with a spatula until the sugar has dissolved. The mixture will look cloudy but you should be able to feel the sugar dissolving.
  • Now turn up the heat to a medium, low. Let it bubble and simmer until the temperature reaches 132c. You may need to give it a little stir every now and again but keep an eye on it.
  • Once the temperature has reached 120c place the two egg whites in a clean mixing bowl, whisk until stiff peaks.
  • When the temperature has been reached in the sugar mixture turn off the heat. Carefully pour the hot mixture into the mixer whilst the mixer is whisking on a low setting.
  • Once all the mixture has been poured in turn the mixer up to a medium setting and whisk for 6 minutes. Do not mix for less as this time is used to cool the mix and set the nougat.
  • Before the nougat is ready line a loaf tin with parchment paper. After the 6 minutes are up add the cocoa powder and whisk in. Do not add the cocoa powder before as it will make the nougat runny.
  • Pour the mixture into the tin, spray the back of a spoon with oil and use this to help you smooth out the nougat evenly. Set aside to set.

Caramel

  • Begin making the caramel by adding all the ingredients to a heavy based pan. Turn the heat onto a medium heat. Use a spatula to continuously mix the mixture to prevent from burning. Continue until it comes to the boil ( Bubbling). Then from this point it will take about 5 minutes for the caramel to thicken. You should be able to see the base of the pan when stirring and it should have turned a caramel colour.
  • Pour over the nougat and spread evenly straight away.

Chocolate

  • Once the caramel layer has set make the chocolate by melting 2/3 of the chocolate in the microwave in 30 sec short bursts. Once melted add the last 1/3 of chocolate and stir in until its all melted. Lastly add the Just flavour and stir in until dissolved.
  • Chop the nougat/caramel into desired pieces, you should get about 6/7. Lay a baking tray with parchment and place a cooling rack over the top, place the cut bars onto the cooloing rack spaced apart.
  • Put a tablespoon of chocolate on the top and use a palette knife to cover each side, thicker on the top, after a minute remove to a plate or parchment to stop them sticking to the rack. Repeat with all of the bars.
  • Once they are dry you can turn over and do a thin layer on the underside.

Store the Homemade Mars Bars in a airtight container and eat within 2 weeks.
