'Key Lime' Pie

This Key Lime Pie recipe is a zesty and refreshing take on an American classic. We have used Just Flavour Vanilla and Just Flavour Coconut, to pack an extra punch of flavour into the filling.

Ingredients

Base:

  • 450g Ginger biscuits
  • 40g Light brown sugar
  • 150g Butter

Filling:

  • 3 limes Zest and Juice
  • 2 tins Condensed milk
  • 300g Creme fresh
  • 2tsp Just Flavour Vanilla

Topping:

  • 300g Double cream
  • 2 tins Coconut cream
  • 4 tbsp Coconut Natural Flavoured Icing Sugar (or 4tbsp plain icing sugar and 1/4tsp Just Flavour Coconut)

Method

Biscuit Base:

Preheat oven to 180c fan

  1. Melt the butter in the microwave or in a pan.
  2. Once melted, add the sugar and biscuits, then mix until well combined.
  3. Pour the mixture into a 12″ Flan tin and flatten to the base and up the sides.
  4. Bake for 10 minutes, then allow to cool completely.

‘Key Lime’ Filling:

  1. Pour the Condensed milk and creme fresh into a mixing bowl and mix to combine.
  2. Next add the Juice and most of the zest from the limes (reserve some zest for decoration) and the Just Flavour vanilla.
  3. Mix well and pour into the cooled biscuit base.
  4. Bake at 180c Fan for 15 minutes.
  5. Allow this to cool completely for a couple of hour before adding the topping.

Cream topping:

  1. In the bowl of a stand mixer with the whisk attachment fitted, add the cream, coconut cream, and icing sugar (and just Flavour if not using coconut icing sugar).
  2. Whisk until thick.
  3. Spread the mixture over the top of the pie, then sprinkle with the remainder of the lime zest.
  4. Enjoy!

Keep the Pie refrigerated for up to two days.
