Nutty Clusters are a delicious simplified version of Florentines. They are quick to make, with mostly store cupboard ingredients. I have chosen to use Almonds and cherries as my main ingredients, with the addition of an Amaretto Flavour Shot. You can use any nuts and dried fruit you like! We will also dip the bottom of our Nutty Clusters in dark Melt & Pour.

These would also me great made with peanuts and Banana Split Flavour shot, Or Pistachios with cranberries and Orange Zest Flavour shot. For a festive twist, use cherries, almonds, and a Christmas Punch Flavour Shot. The possibilities are endless!

Ingredients

  • 150g Nuts of your choice
  • 50g dried or glacé fruit of your choice
  • 25g Flavour shot
  • 2tbsp honey/syrup
  • Melt and Pour for dipping

Method

Preheat your oven to 150c Fan.

  1. In a large bowl, add the nuts, fruit, Flavour shot, and syrup/honey.
  2. Mix by hand with a spatula until well combined.
  3. Prepare a baking sheet with greaseproof paper, then spoon the mixture onto the paper using a lightly oiled round cookie cutter to shape into discs.
  4. Bake for 15-20 mins (until golden brown).
  5. Allow to cool completely on the baking sheet. You may need to tidy them up a little if they have spread. be very carful as the syrup will be very hot.
  6. Once cooled, melt your chocolate with short bursts of heat in the microwave or over a double boiler.
  7. Dip the bottom of the Nutty clusters in the chocolate, and leave to set on Greaseproof paper.
  8. Enjoy your Nutty Clusters!
