This recipe for Victoria Sponge – Just Flavour is simple, fast, and requires only 5 ingredients!
Victoria Sponge is a British classic; whether enjoyed for afternoon tea, a birthday, or even for a wedding cake! Victoria Sponge is always a big hit, nostalgia in every bite!

You can use whipped cream to fill your sponge, but buttercream is also delicious and better suited for a cake that would need to be left at room temperature.
Ingredients
- 300g Margarine
- 6 large eggs
- 300g SR flour
- 300g Caster sugar
- 5g Just Flavour
Method
- Preheat your oven to 140c fan or gas mark 1.
- Line 2x 8″ round cake tins with greaseproof paper.
- In the bowl of a stand mixer, add the margarine, caster sugar and Just Flavour. Beat until light and fluffy.
- Add the eggs and mix until well combined making sure to scrape down to the bottom of the mixer bowl.
- Now add the flour. Fold in by hand to ensure not to knock the air out of the cake batter.
- Divide the cake batter between the two cake tins and pop them in the oven. Bake for approx 30-40 mins. Test with a wooden skewer; if baked, your skewer should come out clean.
- Allow to cool completely on a cooling rack.
- Once completely cooled you can fill your sponge with whipped cream or buttercream.
