A lovely light and delicious small cake made with ground almonds and flavoured by choice. Whipping It Up Friands are perfect for afternoon tea.
What is a Friand?
A friand is a small almond cake, popular in Australia
The main ingredients are almonds Egg Whites, Butter and Icing Sugar. A friand typically has additional flavourings such as Chocolate, Coconut, Dried or Fresh Fruit, and Nuts. It is baked in small moulds, typically oval or round in shape!

Ingredients
- 250g Whipping It Up Mix – Flavour of your choice
- 150ml Tepid Water (Room Temperature)
- 100g Plain Flour
- 125g Ground Almonds
- 130g Melted Unsalted Butter
Instructions
1. Put the Whipping It Up in a cleaning mixing bowl with the whisk attachment fitted. Add in the water and whisk until you reach firm peaks (when the mixture holds its shapes on the whisk)
2. Grease a Friand Tin or Cupcake Tin with melted butter or oil. Alternatively, you can use cupcake cases.
3. When the Whipping It Up has finished whisking, preheat the oven to 180c Fan.
4. Mix the Flour and the Ground Almonds, and fold the Whipping It Up Mix into the Dry Ingredients.
5. Finally add in the Melted Butter and fold in carefully until combined.
6. Divide half of the mix into the holes of the tin, half filling each one, add some fruit if using then cover each one with the remaining mix.
7. Add the Fruit to the top of each Friand.
8. Bake in the oven for 20-25mins until Risen and Golden in colour.
9. Once baked, leave in the tin for 5 mins to cool slightly before lifting out and placing on to a wire baking rack.
10. Serve straight away warm or store in an airtight container once cooled for up to 3 days.
