Air Fryer Banana Bread Muffins are moist and beautifully portioned in muffin size. Baking them in the Air Fryer saves times and gives you a quick tea time or breakfast treat fast. You can bake this recipe in a loaf tin in the air fryer too.

Ingredients
- 55g Melted Unsalted Butter
- 100g Sugar and Crumbs Natural Flavoured Icing Sugar – Banana Split/Velvet Vanilla or Salted Caramel
- 50g Brown Sugar
- 180g Plain Flour
- 3 Ripe Bananas
- 1 Large Egg
- 1 Tsp Baking Powder
- Chocolate Chips ( optional )
Method
- Start by adding the sugars and melted butter to a clean mixing bowl and beat together until smooth.
- Next add in the egg and again beat in, mash the 3 bananas with a fork in another bowl and then add these to the mix, fold in until combined.
- Sift the flour and then add the baking powder. Stir in. Fold into the wet ingredients and combine well until all is incorporated. If using add in the chocolate chips and then fold in.
- Use some bake safe muffin moulds ( Silicone ) and fill each muffin with the mix till 3/4 full.
- Sprinkle with brown sugar if desired.
- Bake in the air fryer for 13 mins on BAKE mode at 160c. They should be nice and golden.
- Let cool completely before serving. They keep well for 5 days in an airtight container.
For a loaf bake in the air fryer on BAKE mode at 160c for 30-35 mins.
