Air Fryer Banana or Apple Roll Ups are a breakfast delight, flatten bread with a fruit filling wrapped up and dipped in an egg mixture and then rolled in sugar. Perfect for a breakfast or after school snack.

Ingredients
- 50g Sugar and Crumbs Natural Flavoured Icing Sugar ( split into 2 x 25g )
- 6 pieces of White bread
- 3 Tbsp Butter Unsalted
- 1 Egg
- 2 Bananas or 2 Apples
- 1 Tbsp Brown Sugar plus extra for sprinkling
- 3 Tbsp Milk
Method
- Start by adding the butter to a frying pan and melt, add 25g of the icing sugar and stir in, add either bananas or apples. Cook until broken down and become soft. Set aside.
- Cut the crusts off the bread and flatten by rolling out with a rolling pin.
- Place a layer of the fruit mixture to one side of the bread.
- Beat the egg and then using a pastry brush, brush the other side of the bread. Roll up the bread from the fruit side to the egg wash side tightly but not too tight as the filling will pop out.
- Next add the milk to the egg wash and stir together. Dip each roll into the egg/milk mix and then place in the air fryer, sprinkle with brown sugar and bake on Air Fry at 160c for 4 mins until golden, turn after 2 mins.
- Sieve the 25g remaining icing sugar over the top and serve.
