This Black Forest cookie sandwich recipe is a delicious combo of chewy chocolate flourless cookie, velvet vanilla buttercream and cherry pie filling.
To Make this recipe I’ll be using Natural cocoa Powder and our famous Velvet Vanilla Natural Flavoured Icing sugar. Take a look at the products full ranges below.
Ingredients:
Cookies:
- 60g butter
- 200g caster sugar
- 3tbsp Chocolate Cherry Natural Flavoured Cocoa Powder
- 120g dark chocolate chips
- 130g plain flour
- pinch salt
- Pinch bicarbonate of soda
- 2 large eggs
Filling:
- 250g softened butter
- 500g Natural Flavoured Icing Sugar – Velvet Vanilla
- 1 tin of cherry pie filling
Method
For the cookies:
Preheat oven to 160c fan
- In a microwave safe bowl heat the butter and chocolate in short busts, stirring between each increment, until completely melted, then set aside to cool a little.
- Now combine the eggs and sugar in the bowl of a stand mixer with the paddle attachment fitted. Whip for 4-5 minutes on high so that the mixture is very pale and bubbly.
- Add the butter and chocolate mixture and mix on low until just combined.
- Now sieve in the flour, cocoa powder, bicarb and salt. mix by hand until just combined. the mixture should look looser than traditional cookie batter.
- Use a small cookie scoop to scoop the batter onto a lined baking sheet, leaving plenty of space for the cookies to spread.
- Bake for 10-12 minutes, then allow to cool on the tray for 5 minutes before transferring to a cooling rack.
For the buttercream:
- In the bowl of a stand mixer with the paddle attachment fitted, whip the butter until pale.
- Now add the Velvet Vanilla Natural Flavoured Icing Sugar and chop in with a spatula to avoid an icing sugar cloud.
- Mix again until well combined. If your buttercream is quite thick (or if the room is cold) you may wish to use a little boiled water to loosen it slightly.
Assembling the Black Forest Cookie Sandwiches
- Once the cookies are completely cooled, make pairs and sit one of each pair bottom side up.
- Fit a piping bag with a piping tip of your choice, fill with the vanilla buttercream, then pipe a circle around the edge of the cookie. I like to use a Jem 2J.
- Now fill the inside of that piped circle with cherry pie filling, drizzling a little of the sauce over the buttercream.
- Add the top cookie and twist gently to secure.
