Making Chewy American style Cookies at home (in any flavour imaginable) is a dream come true for me! This kind of cookie, for me, will always have an association with cookie stands at shopping centres, and paying an arm and a leg for just one cookie!
This recipe is reasonably inexpensive to make, and is mostly store cupboard staples. The only thing ingredient I have to buy in is the chocolate chips as I would just eat them on their own if I kept a stock!
I have made orange cookies with dark chocolate chips, but other faves are:
Raspberry and dark chocolate
Lemon and white chocolate
Salted Caramel and any chocolate
Rum and Raisin with raisins instead of chocolate chips

Ingredients
- 200g Chocolate chips
- 220g plain flour
- 1tsp bicarbonate of soda
- Pinch of salt (if using unsalted butter)
- 120g light soft brown sugar
- 60g caster sugar
- 110g butter
- 1 egg
- 25g Flavour Shot
Method
- In the bowl of a stand mixer, place the butter, caster sugar and soft brown sugar.
- Beat until light fluffy before adding the egg and mixing well again.
- Now it’s time to add the flavour shot, salt, bicarb, and half of the flour. mix on a slow speed until just combined.
- Add the remaining flour and mix again until combined.
- Fold in the chocolate chips.
- Chill the mixture for at least half an hour.
- Use a small ice cream scoop to portion your cookies onto a parchment lined baking sheet.
- Chill again for at least half an hour. Do not flatten the balls of cookie mix.
- Bake at 170c fan for 8-12 mins. The cookies should still feel soft in the centre.
- Allow to cool on the baking sheet for around 5 mins before transferring to a cooling rack.
