This cake is so easy to make, and absolutely delicious, I actually never thought I would enjoy cold pancakes, you must give them a try, making this delicious pancake cake.
Ingredients
- 100g Plain flour
- 2 Large eggs
- 300ml Milk
- 1 tbsp Sunflower or Vegetable oil, plus a little extra for frying
- Optional Water Activated Colour Pop to make coloured pancakes, just like we have in our photo.
- 300ml of Fresh double cream
- 2 heaped Tablespoons of Flavoured Icing Sugar of Choice plus additional for dusting the whole cake later.
Method
- Put 100g plain flour, 2 large eggs, 300 ml milk, and 1 tbsp sunflower or vegetable oil, into a bowl or large jug, then whisk to a smooth batter. Then add your water activated colour pop, or divide the mixture and make several colours if you wish.
- Set aside 30 mins to rest if you have time, or start cooking straight away, if your cooking area is cold.
- Set a medium frying pan or crêpe pan over medium heat and carefully wipe it with some oiled kitchen paper.
- When hot, cook your pancakes for 1 min on each side until golden, set them aside on a cold plate, overlaying them, and wait for them to go cold, from this mix you should get 10/12 pancakes.
- Place 300ml of double cream into a mixing bowl, add 2 heaped tablespoons of flavoured icing sugar of your choice, and beat until nice, thick, and creamy.
- Place your first pancake on a pretty dessert plate, then cover it with a thin layer of cream, and continue to do so, until all layers are stacked.
- Finally, dust over the whole cake stack and decorate it with delicious fruits.
