These Festive Shortbread biscuits are a really yummy buttery treat! Filled with dried cranberries and chopped pistachios, and Flavoured with Orange and Pistachio, they are delicious! What’s more, you can keep this dough in the freezer, and just cut slices as and when you need them!

We have used two Flavour shots (Orange Zest and Pistachio) to flavour our Festive shortbread, but you could just use Pistachio and they would still be lovely.

Ingredients

  • 300g Plain flour
  • 25g Pistachio Flavour Shot
  • 25g Orange Zest Flavour Shot
  • 210g chilled cubed butter
  • 100g caster sugar
  • 50g chopped Pistachios
  • 60g dried cranberries

Method

  1. In a large mixing bowl, Place the flour, sugar, Flavour Shot and butter.
  2. Using your hands, rub the butter into the dry ingredients. Keep rubbing until you have the texture of bread crumbs. this does take a while.
  3. Add the pistachios and cranberries and mix until evenly distributed.
  4. On your worktop, knead the mixture until a dough is formed. it will be quite crumbly.
  5. Roll the dough into a chunky sausage and wrap tightly with clingfilm.
  6. Freeze for roughly half an hour while your oven heats to 140c fan.
  7. Remove the dough from the freezer and open one end of the clingfilm wrap.
  8. Cut as many slices as you require before wrapping again and placing back into the freezer.
  9. Place the slices on a lined baking sheet, and bake for 15-25 mins depending on the thickness of your biscuits. They should be turning golden at the edges but feel soft in the centre. they will firm up once cooled.
  10. Enjoy your Festive Shortbread Biscuits!

The dough will keep in the freezer for for up to two months!

You can also Half dip your biscuits in chocolate and sprinkle some extra pistachios! I have dipped in white chocolate, but dark chocolate would also be delicious!
