This Funfetti shortbread bites recipe is inspired by the classic American funfetti cake, but with a natural Vanilla flavour rather than synthetic vanilla.
For this recipe I’m using Velvet Vanilla Whipping It Up! and Sprinklelicious Rainbow strands.
Ingredients
- 100g Velvet Vanilla Whipping It UP!
- 30ml tepid water
- 100g softened butter, cubed
- 200g plain flour
- 75g rainbow sprinkles
Method
- In the bowl of a stand mixer with the paddle attachment fitted, add 100g Whipping It Up and 30ml water and beat for 2 minutes until combined.
- Add the butter slowly and beat until well combined.
- Add the flour and mix on low until just combined.
- Now add the sprinkles and knead in by hand.
- Push the dough into a lined brownie tin, cover with another piece of baking parchment and flatten completely (I like to use the base from a loose bottomed square baking tin).
- Place in the fridge for 30 minutes. Preheat the oven to 160c fan.
- Take out of the fridge and remove from the brownie tin. Slice the dough into squares and place on a lined baking tray.
- Bake for 15 minutes or until turning golden.
- Allow to cool completely on a cooling rack.
