This Jap Cakes recipe is an old favourite that only requires a few basic ingredients! I am using Whipping it Up! Shots in coffee flavour for that authentic Jap Cake flavour, and Coffee buttercream Using our Delicious Natural Flavoured Icing Sugars.

Ingredients
For the Cakes:
- 35g Whipping It Up! Shot Coffee Flavour
- 60ml tepid water
- 150g caster sugar
- 75g ground almonds
- 1.5tbsp cornflour
For the Filling:
- 200g Butter
- 400g Natural Flavoured Icing Sugar
Method
Jap Cakes:
Preheat the oven to 140c fan
- Place the ‘Whipping It Up!’ and tepid water into the bowl of a stand mixer with the whisk attachment fitted.
- Whisk on high until the mixture is foamy.
- Add half of the caster sugar (75g) and continue to whisk on high until medium peaks have been achieved.
- In a separate bowl, combine the ground almonds, corn flour and the remaining half of the caster sugar.
- Pour the almond mixture into the meringue and fold until well combined.
- Spoon into circles on a lined baking sheet.
- Bake for 30 minutes, then switch off the oven and open the door a crack allowing the cakes to cool slowly while still in the oven.
Filling and Assembly:
- Add the softened butter to the bowl of a stand mixer and beat until pale.
- Now add the Natural Flavoured Icing Sugar, being sure to chop it into the butter before turning the mixer back on.
- Mix until well combined.
- Crush two of the baked cakes and set aside.
- Pipe buttercream onto half of the remaining cakes and sandwich the other half on top to create a ‘filled biscuit’ look, pushing the cakes together so that the buttercream reaches the edges.
- Now dip the cakes into the crushed cakes so that the crumbs adhere to the buttercream.
- You may wish to drizzle or dip in some dark chocolate, this is optional.
