This Magic Custard Slice- Just Flavour recipe is easy to prepare and requires just 7 ingredients. It’s called a magic custard slice due to the three distinct layers that form during baking. On the bottom you get a dense custard, the middle is a lighter custard and the top layer is like sponge cake! The magic is that all three layers come from a single batter!

Ingredients
- 4 large eggs
- 250g caster sugar
- 10g Just Flavour
- 115g lightly salted butter
- 500ml semi skimmed milk
- 125g Plain Flour
- icing sugar for dusting
Method
Preheat the oven to 150c Fan and line an 8″x8″ baking dish with greaseproof paper.
- Melt the butter and set to the side to cool slightly.
- Warm the milk and set to the side.
- Separate the eggs into two large bowls. Whisk the whites until stiff peaks form, then set to the side.
- Now, in the other bowl, beat the egg yolks with the Just Flavour, sugar and butter until well combined and the mixture is pale.
- Continue mixing on a low speed while slowly pouring in the warm milk.
- Once the milk is combined into the egg yolk mixture, sieve in the flour and mix again until just combined.
- Now fold the whisked egg whites into the batter by hand. Do not over mix at this stage, it’s ok to see a few white streaks in the mixture.
- Pour the Batter into the lined baking dish and bake for 45-50 minutes until the cake is set but still jiggly in the centre.
- Allow to cool completely before serving – Once cooled to room temp, place in the fridge to continue setting. This can take at least three hours.
- Once chilled, cut the Magic Custard Slice into 9-12 slices depending on preferred portion size, then dust liberally with icing sugar before serving.
