What is Orange Victoria Sponge Cake?
This Orange Victoria Sponge (Victoria sandwich) is the classic British teatime treat — simple yet elegant. Perfect for birthdays, celebrations or afternoon tea.

Instructions
1. Pre-heat the oven to 140°C Fan, 275°F, Gas mark 1.
2. Place the Sugar and Crumbs Natural Flavoured Icing Sugar and margarine into a mixer bowl. Blend until light and fluffy.
3. Add the eggs one at a time, mixing well until fully combined.
4. If the mix starts to curdle, add a tablespoon of the weighed flour to bring it back together.
5. Add the remaining flour and fold in gently — do not beat, as this will knock out the air.
6. Divide the mixture between 2 x 8 inch sandwich pans.
7. Bake both layers at the same time for approximately 30–40 minutes, until a cake tester comes out clean.
