Peach and Blueberry Pudding is a dessert that’s comforting and full of flavour. Serve with ice cream for the perfect balance of hot and cold. Works best when peaches are in season, you can swap the blueberries for raspberries or strawberries for different combinations.

Ingredients
- Peaches (Fresh) x 4 to 5 depending on size
- 250g Blueberries
- 2-3 Tbsp of Honey
- 175g Unsalted Butter (Cubed)
- 175g Plain Flour
- 100g Light Brown Sugar + 25g for the first part
- 75g Sugar and Crumbs Natural Flavoured Icing Sugar (Flavour of choice)
Method
- To start making this Peach and Blueberry Pudding preheat the oven to 170c. In an oven proof dish add the flour, 100g brown sugar, 75g S&C Icing sugar and the butter, DO NOT MIX. Place this in the oven and let the mixture melt for about 15 minutes.
- Meanwhile cut the peaches into slices and add to a bowl with the blueberries, honey and 25g Brown Sugar and stir together until coated.
- When the Flour/Sugar/Butter mixture is ready take it out of the oven and give it a good stir it should be nice and thick. In a new oven proof dish place the peaches/blueberries mix in the bottom and spread evenly, add dollops of the flour mix all over the top. Place in the oven too cook fully for 40mins.
- Serve immediately hot with ice cream.
