Rolled Buttercream or Butterpaste as you may wish to call it is the new on-trend alternative to Sugarpaste.
Recipe
125g Block Butter
125g Corn Syrup
500g Icing Sugar – we recommend you use flavoured icing sugars, so it tastes delicious.

300g icing sugar for kneading in.
Method
Beat and soften butter until light and fluffy
Drizzle in slowly while the mixer is still going Corn Syrup
Add 500g of Flavoured icing Sugar, chop in, and then mix until it forms a sticky dough.
Turn dough onto a work surface, kneading in the extra 300g of icing sugar, you may need more if the weather is hot and sticky, 300g should be enough, I have actually used less (250g). Once all kneaded, then roll into shape, store in a ziplock bag and store in the fridge.
It’s perfect to roll out for cakes, toppers, or use in your moulds as a delicious alternative to Sugarpaste.
