Enjoy making these delicious Vegan Jaffa cakes and have one or two as an afternoon treat whilst you take 5 minutes for yourself.

What are Vegan  Jaffa cakes?

Vegan Jaffa Cakes are quick and easy to make and are made entirely by using non-animal products. They are a  light delicious sponge flavoured with our Orange Zest Natural Flavoured Icing Sugar with a spoonful of orange marmalade on the top and covered in melted non-dairy dark chocolate.

Ingredients 

  • 100g Self Raising Flour
  • 60g Sugar and Crumbs Orange Zest Natural Flavoured Icing Sugar
  • 100ml Soya Milk
  • 50ml Vegetable Oil
  • Marmalade, any flavour you desire

For the topping

  • 50g Vegan Butter
  • 100g Vegan Dark Chocolate

Instructions

1. Preheat the oven to 160c Gas mark 3, 325F, and lightly grease a 12-hole fairy bun tray.

2. In a mixing bowl mix the Soya Milk, flour, Natural Flavoured Icing Sugar and vegetable oil until well combined.

3. Carefully pour the mixture into your prepared bun tray.

4. Bake in the oven for 8-10 minutes until they are golden brown and a cake tester comes out clean when inserted into the centre of the cake comes out clean.

5. Cool on a wire tray.

6. Spread a spoonful of marmalade onto the top of each bun. Making sure it is not too near the edge.

7. Melt the non-dairy butter and non-dairy chocolate together using the bain-marie method or melting in a microwave on 10-second bursts,

8. Put the wire cooling rack that the cakes are on into a baking tray and carefully spoon the melted chocolate over each of the buns until the top is fully coated.

9. Allow setting in the fridge for an hour before serving.
