A delicious hot pudding filled with gooey mixed berries, with a crisp crumble/cobble topping. This Very Berry Cobbler recipe is sure to warm you up from the inside out. It’s a bit like a crumble, but instead of little crumbles (which are always the best bit anyway) you get great big crumbles!

Ingredients
For the filling:
- 1kg Frozen mixed berries
- 1tbsp lemon juice
- 25g Flavour shot of choice
- 3tbsp Caster sugar
- 4tbsp cornflour
For the topping:
- 185g caster sugar
- 25g Flavour Shot!
- 320g SR flour
- 115g butter
Method
Preheat the oven to 160c Fan
- Combine all of the ingredients for the filling in a bowl, and stir carefully until combined.
- Pour into a 9″ square baking tin/dish making sure to scrape the bowl with a spatula to get all of the sugar/flavour shot/corn flour.
- Set aside while you make the topping.
- Soften the butter slightly, then add the flour, Flavour Shot and sugar, then rub together until fully combined. This mixture should resemble a cross between crumble and pastry.
- Use your hands to form ‘cobbles’ from the mixture and place them on top of the filling.
- Bake for 30-35 minutes until the berries are bubbling and the topping is turning lightly golden.
- Allow the cobbler to rest for 10-15 minutes for the juice from the berries to thicken.
- Serve your Berry Cobbler with a scoop of S&C Velvet Vanilla Ice cream!
