Whipping It Up! Chocolate Macarons

Even chocolate Macarons are easy peasy with this method!

Ingredients

  • 250g Whipping It Up! in a flavour of your choice
  • 160g ground sieved almonds
  • 100ml tepid water
  • 50g extra Whipping It Up!
  • 20g cocoa powder

Method

Preheat oven to 140c or gas mark 1

  1. Place 250g Whipping It Up! and 100ml water into the bowl of a stand mixer. Ensure the bowl and whisk attachment are grease free. A wipe with lemon juice or white vinegar will remove any grease residue.
  2. Whisk until stiff peaks are achieved.
  3. While your meringue whisks; place the ground almonds, 50g Whipping It Up!, and cocoa powder into a large bowl and mix well.
  4. Once your meringue has reached stiff peaks, add half to the dry ingredients and fold until well combined.
  5. Add the remaining meringue and fold until just combined.
  6. This next stage is known as Macaronage. Use your spatula to spread the mixture up the sides of the bowl, then scrape back down. Repeat until you have achieved ribbon stage (when the batter just about flows from the spatula without breaking).
  7. Fill a piping bag fitted with a large round piping tip, and pipe onto a greaseproof paper-lined baking sheet.
  8. Try to pipe straight down and close to the sheet to keep a nice round shape to your macarons.
  9. Now you need to bang the baking sheet on the work surface several times to remove any large air bubbles.
  10. Bake for 12-15 mins, until the shells are firm and do not move when touched.
  11. Allow to cool completely before removing from the paper.
