White Choc Rocky Road

This white choc rocky road makes a delicious treat, and is pretty enough to gift! Filled with fruit, nuts and marshmallows, the colours really pop once sliced. I’m using an orange flavour shot to flavour my white chocolate, which pairs really nicely with the pistachios and cranberries in the recipe. Black cherry flavour shot would also pair really nicely with this recipe.

You can substitute any of the fruit or nuts to suit your taste, or leave nuts out completely to make a nut free version of this White Choc Rocky Road.

Ingredients

  • 75g pink and white mini marshmallows
  • 100g dried apricots
  • 100g glacé cherries
  • 100g dried cranberries
  • 100g Pistachio nuts (macadamia nuts also work really well for this recipe!)
  • 120g biscuits of choice
  • 500g White Melt & Pour
  • 15g Flavour shot
  • 40g butter

Method

  1. Chop the glacé cherries in half and the apricots into quarters.
  2. Break up the biscuits into small pieces. Try not to bash them into crumbs, crumbs will affect the appearance of the finished rocky road.
  3. Place the marshmallows, fruit, nuts and biscuits into a large bowl and stir to evenly distribute.
  4. In a separate bowl melt the Melt & Pour with the butter in short bursts in the microwave making sure to stir thoroughly at every interval.
  5. Once melted, give in the 15g Flavour shot and stir through.
  6. Add the choc and butter mix to your dry ingredients and stir thoroughly.
  7. Tip the mixture into a lined brownie tin or similar.
  8. Refrigerate for at least an hour before slicing.
