White Chocolate Cookies

Sweet, soft, and studded with creamy chunks of white chocolate, these cookies are pure comfort in every bite. Perfect with a cup of tea or a glass of milk, they’re quick to make and even quicker to disappear from the plate!

Ingredients

  • 114g butter
  • 60g brown sugar
  • 60g caster sugar
  • 1tsp Raspberry and White chocolate flavour shot
  • 2 egg yolks
  • 1/2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 175g plain flour
  • 150g white choc chips

Method

  1. Cream together the butter, brown sugar and caster sugar.
  2. Now add the flavour shot and mix again.
  3. continue to mix while adding the egg yolks.
  4. Sift in the flour, baking powder and bicarbonate of soda, then mix until just combined.
  5. Stir in the white chocolate chips.
  6. Tip the dough onto clingfilm and roll into a sausage. Chill for 2 hours.
  7. Once chilled, slice the dough into 12 discs and bake at 190c for 12-15 minutes.
