Sweet, soft, and studded with creamy chunks of white chocolate, these cookies are pure comfort in every bite. Perfect with a cup of tea or a glass of milk, they’re quick to make and even quicker to disappear from the plate!
Ingredients
- 114g butter
- 60g brown sugar
- 60g caster sugar
- 1tsp Raspberry and White chocolate flavour shot
- 2 egg yolks
- 1/2 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 175g plain flour
- 150g white choc chips
Method
- Cream together the butter, brown sugar and caster sugar.
- Now add the flavour shot and mix again.
- continue to mix while adding the egg yolks.
- Sift in the flour, baking powder and bicarbonate of soda, then mix until just combined.
- Stir in the white chocolate chips.
- Tip the dough onto clingfilm and roll into a sausage. Chill for 2 hours.
- Once chilled, slice the dough into 12 discs and bake at 190c for 12-15 minutes.
