Lamingtons are a delicious Australian treat consisting of a cube of vanilla cake, dipped in a chocolate glaze, and rolled in coconut. Why Limit ourselves to just chocolate and vanilla though, when there could be so many delicious flavour combinations? Fruity Lamingtons are so delicious and work well in any fruit flavours!
For this recipe, I used a 500g bag of our Easy bake Vanilla Genoise cake mix, and half a packet of Strawberry Milkshake Flavour shot to make a delicious strawberry flavoured sponge, but there are so many flavour options! Take a look at our range of Flavour Shots and Natural Flavoured Icing Sugar!
Ingredients
For the Sponge:
500g Easy Bake Vanilla Genoise cake mix
25g Flavour shot
Alternatively you can bake your sponge from scratch using this recipe.
For the coating:
270g Natural Flavoured Icing Sugar
100ml boiling water
35g melted butter
30ml milk
Desiccated coconut
Method for sponge
- Line a 2lb loaf tin and preheat oven to 140
- Prepare the cake mix according to the instructions of the packaging, but add in your Flavour Shot before adding any Liquids.
- Bake for around 50mins, until a skewer comes out clean.
- Allow the cake to cool completely before slicing into cubes or fingers.
- Place the sponge portions on a baking sheet lined with greaseproof paper and freeze for 20-30 mins.
Method for coating
- Prepare a baking sheet with grease proof paper.
- Mix the Natural Flavoured Icing Sugar with the boiling water. If you would like a colour glaze I recommend adding Colour Pop Water Activated colours to the water before combining with the sugar.
- Add the milk and butter and mix until you have a lovely smooth glaze. If you prefer a thicker glaze, you can add more Natural flavoured Icing Sugar.
- Pour a layer of desiccated coconut onto a plate for rolling.
- Dip your chilled sponge pieces into the glaze, making sure you have a good coating. the glaze should be loose enough to soak into the sponge a little.
- Immediately roll the dipped sponge pieces in the coconut then set on the prepared baking sheet.
- Chill for around an hour before enjoying your Fruity Lamingtons!
