What are Macarons?
A Macaron is a sweet confection made with a meringue base, with Ground Almonds added. Not to be confused with the coconut macaroon!

Ingredients
- 250g Whipping It Up!
- 180g ground Almonds (sieved twice)
- 100ml tepid water
- 50g extra Whipping It Up! (or Natural Flavoured Icing Sugar)
Method
Preheat your oven to 140c or Gas mark 1
- Add the 250g of Whipping It Up! and 100ml water to the bowl of a stand mixer. the Bowl and whisk attachment must be grease free. A wipe with lemon juice or white vinegar will remove any grease residue.log
- If you are going to colour your macarons, I recommend using Colour Pop Water Activated colours. You can add this to the bowl at this stage.
- Whisk on a high speed until you have achieved stiff peaks.This is your meringue base.
- While the meringue whisks, add the ground almonds and 50g Whipping It Up to a large bowl and mix to combine.
- Once your meringue is at stiff peaks, add half to the dry ingredients in the mixing bowl and fold until well combined.
- Now add the remaining meringue and fold again until just combined.
- This next stage is known as Macaronage. Use your spatula to spread the mixture up the sides of the bowl, then scrape back down. Continue repeating this step until you have reached ribbon stage (where the batter can just about flow from your spatula without breaking.
- Use a large piping bag with a large round piping tip to pipe the mixture onto a greaseproof paper lined baking sheet. Try to pipe straight down and close to the surface to keep a nice shape.
- Bang the baking sheet o your work surface several times, until you can see that any air bubbles have popped.
- Bake for around 14mins until the shells feel firm and no longer wobble when touched.
- Place on a cooling rack. do not remove from the paper until completely cooled.
Filling
You can fill your macarons with buttercream/ganache/fruit fillings.
